Wobei ich zuerst gar nicht mitmachen wollte, wegen der vorherrschenden Sommer-Hitze. Unter solchen Umst\u00e4nden den Backofen einschalten ist f\u00fcr mich ja normalerweise ein &#8222;no go&#8220;!<\/p>\n<p>Na was solls, ich habs eben dann doch getan und auf keinen Fall bereut! Denn entstanden sind dabei diese wunderbaren Milchbr\u00f6tchen. Das <a href=\"http:\/\/www.hefe-und-mehr.de\/2012\/11\/sonntagsbrtchen-bbd-54\/\">vorgeschlagene Rezept<\/a> von der Stefanie von <a href=\"http:\/\/www.hefe-und-mehr.de\">Hefe und mehr<\/a> habe ich kurzerhand veganisiert.<\/p>\n<p><a href=\"http:\/\/www.hefe-und-mehr.de\/2012\/11\/sonntagsbrtchen-bbd-54\/\">Originalrezept von Hefe und mehr<\/a><\/p>\n<blockquote><p><strong>Sonntagsbr\u00f6tchen<\/strong><\/p>\n<p>ergibt etwa 18 Br\u00f6tchen<\/p>\n<p>Milk roux<\/p>\n<p>30g Mehl Type 550<br \/>\n150g Milch (ich habe Mandelmilch aus Wasser und Mandelmus verwendet)<\/p>\n<p>Teig<\/p>\n<p>gesamter Milk roux<br \/>\n1000g Mehl Type 550 (ich habe Zopfmehl verwendet und musste ca. 6 EL mehr hinzuf\u00fcgen)<br \/>\n50g Milch (habe ich weggelassen, da der Teig bei mir sowieso mehr als genug nass war)<br \/>\n500g Wasser<br \/>\n30g Zucker<br \/>\n1g Hefe<br \/>\n20g Salz<br \/>\n90g Butter (Margarine)<\/p>\n<p>F\u00fcr den Milk roux Mehl mit Milch kl\u00fcmpchenfrei verr\u00fchren, dann auf den Herd unter st\u00e4ndigen R\u00fchren auf 65\u00b0C erw\u00e4rmen (dauert ca 3 min). In eine Sch\u00fcssel umf\u00fcllen und mit Frischhaltefolie abdecken, so dass die Oberfl\u00e4che nicht austrocknet. Auf Raumtemperatur abk\u00fchlen lassen.<\/p>\n<p>Alle Zutaten f\u00fcr den Teig erst 5 min auf langsamer Stufe in der K\u00fcchenmaschine, dann weiter 10 min auf mittlere Geschwindigkeit kneten.<\/p>\n<p>Den Teig 16 Stunden (\u00fcber Nacht) bei Raumtemperatur gehen lassen.<\/p>\n<p>Am n\u00e4chsten Morgen den Backstein im Backofen auf 250\u00b0C vorheizen, In der Zwischenzeit den Teig in 80g St\u00fccke teilen und zu ovalen Br\u00f6tchen formen.<\/p>\n<p>Die Br\u00f6tchen 45 min gehen lassen.<\/p>\n<p>Die Br\u00f6tchen l\u00e4ngs einschneiden, in den Ofen einschie\u00dfen und mit einer Blumespritze die Seitenw\u00e4nde einspr\u00fchen um f\u00fcr Dampf zu sorgen. Die Br\u00f6tchen f\u00fcr 20 min bei 250\u00b0C backen. Die letzten 10 min der Backzeit auf Umluft schalten und die Ofent\u00fcre einen Spaltweit \u00f6ffnen. Dadurch werden die Br\u00f6tchen besonders knusprig.<\/p><\/blockquote>\n<p>Ich habe die Br\u00f6tchen jedoch nach der Anleitung f\u00fcr <a href=\"http:\/\/www.hefe-und-mehr.de\/2014\/05\/schnittbrtchen\/\">Schnittbr\u00f6tchen<\/a> geformt und nach dem Formen nur etwa 15 Minuten gehen gelassen. (Ich wollte am morgen so fr\u00fch wie m\u00f6glich fertig sein mit backen&#8230;ihr wisst schon: die Sommerhitze!) \ud83d\ude42<\/p>\n<p>Nun einige Bilder von meinem zweiten gelungenen Erlebnisse und Bilder des virtuellen gemeinsamen Backens geteilt.
